Jaffa Cake


A Christmas gift from the Dewsons! The hand crafted knife has been around for more than 100 years old. I am sure there is a story to be told looking at the intricate details of the engrave. For me, the story is a simple one. I am determined to keep this blog going. Thanks to supportive friends and families around me.


Until this recipe came along, the only Jaffa Cake I know are spongy little cakes with orange jelly center and chocolate topping. These are sold like biscuits in blue boxes commonly found in the UK. This cake is called Jaffa Cake because it is 'cake' version of those little Jaffa Cakes. The recipe comes from Table magazine. The sponge is extremely light (almost chiffon like). The sponge is plumped with 3/4cup of orange syrup whilst being cooled. Last but not least, a rich chocolate coating infused with a tablespoon of strong black coffee to go over the top. The result, irresistable!
