Bread & Butter Pudding





Christmas at Watts Farm always holds a special place in my heart. I love how everything about Christmas with the Dewsons are so truely English from the christmas tree in the living room to roasting a 25lbs turkey on Christmas day (which is incredibly delicious). It makes Christmas an almost sacred experience for me. My little contribution to Christmas dinner this year (2008) is an easy & no fuss bread and butter pudding. A really good bread and butter pudding is all about the bread. Here, we diced 6 slices of lovely buttery brioche, mixed with a handful of currents and mixed peel & sugar. Place in a 1L pan or dish. Combine 2 eggs with a pint of milk (583ml) & pour into pan or dish. Let the bread soak in the milk mixture for at least 30 minutes, sprinkle some golden sugar on top of bread and put in a pre-heated 170C oven for 40mins - 45mins or until the top of the pudding turns golden brown. Serve with custard or pouring cream. If you like spice, add a pinch of nutmeg or cinnamon before baking. The pudding in these pictures are taken with Ginny's fine bone china.
