Green Tea Swiss Roll with Red Bean




I decided to go without whipped cream filling and it is probably a good decision. The Moriniaga red bean filling taste better on its own.
Here is a simple fool proof swiss roll recipe :
5nos small eggs separated
90gm sugar (divided usage)
70ml milk
50ml flavorless cooking oil
1 tsp green tea power (more if you prefer stronger green tea flavor)
50gm low gluten flour
30gm corn flour
2 tsp baking powder
a pinch of salt
210gm red bean filling
Whipped Cream or Butter cream
1. Pre-heat oven to 190C
2. Line & grease swiss roll tin
3. Mix and seive flours, and baking powder in a bowl
4. Mix green tea powder into milk until dissolve and combine with oil until well blended
5. Beat egg yolk and 40gm of sugar until light and creamy
6. Add green tea mixture into egg yolk mixture the fold in flour (no. 3)
7. Whisk egg white until soft peak, add salt then gradually add sugar. Whisk until just under stiff.
8. Fold 1/3 egg white into mixture (no. 6). Fold in the rest of egg white gradually taking care not to over mix as it might deflate egg white
9. Pour into prepared tin and bake for 15 minsor top is golden.
10. Turn cake over into cooling rack. Spread thin layer of whipped cream or butter cream. Evenly spread the red filling.
11. Roll and let cake cool down completely.
