Coconut Matcha Layer Cake






I decided to finish up my green tea powder on this lovely spongy matcha cake last night. We had a little discussion at work today on whether a blueberry filling will go well with this sponge. After a long delibration, I was going to give it a shot until I came across some dessicated coconut in the fridge. Coconut and green tea is definitely more imaginable than blueberry.
