Cupcake with Lemon Icing





These are delightful little cupcakes.


Recipe


125gm butter
200gm sugar
2 nos eggs
170gm flour
1/2tsp baking powder
1/4tsp baking soda
125ml buttermilk
1tsp vanilla essence


Pre-heat oven to 170C


Cream butter and sugar till light & fluffy. Add one egg at a time. Add vanilla essence. Shift all dry ingredients together. Add dry ingredients and buttermilk alternatively ending with dry ingredients.
Spoon and level batter in muffin tin lined with paper cups.

This recipe makes exactly 16 cupcakes.


Bake in oven for 20min to 25 mins in pre heated 170C oven.


For the icing, shift 1 1/2 cups of icing sugar, mix with 4 to 5 tbsp of lemon juice and a knob of melted butter. Mix until runny, then pour over cooled cupcakes.


Decorate with chocolate covered sun flower seeds.
