

I decided to go easy this evening & bake something different from cakes and pies. The cookies are inspired by Anna Olsen's program using rolled oats. Having used quite a bit of chocolate lately I thought it would be nice to try other ingredients like almonds and raisins.
These cookies are made with creaming 117gm of butter (in room temperature) with 3/4 cup of light brown butter. Add 1 egg and a dash of vanilla essence when mixture is light and creamy. In a separate bowl mix 1 1/4 cup of rolled oats, 3/4 cup of flour, 1/2 tsp baking powder, 1/2 tsp of salt and 1/2 tsp of cinnamon. Add dry ingredients into wet. Fold 3/4 cup of raisin and 3/4 of almond slices into cookie dough. Drop spoonfuls of cookie dough onto prepared baking sheet 3 to 4 inches apart and bake in pre-heated 180C oven for 25 mins to 30 mins. Turn baking sheet around half way through baking time. I like my cookies more crispy so I shifted my tray closer to the top of oven almost end of cooking time.
It is another comfort food that makes you want to vegetate in front of tele....
