S'more muffins



The 'happening' lot at Villa Marina is having a day out tomorrow at the East Coast Park. Yours sincerely will be chugging away on my computer at the office. I decided to make some muffins for 'their' day out. These muffins are called S'more muffins after the S'more cookies which are basically chocolate chip cookies with marshmallows. Ingredients used are 75gm all purpose flour, 175gm of finely crushed digestive biscuits, 1.5 tsp of double acting baking powder, 1 tsp salt, 2 eggs, 125gm butter, 150gm sugar, 1 tsp vanilla essence, 180ml full cream milk and  180gm of milk chocolate chips or as much or little as you like. The recipe is taken from Cupcake Galore. The digestive biscuits adds a lovely grainy texture to the muffin.  

The rice chocolate sprinkle is eaten at breakfast in Holland. They are sprinkled on toast like jam! Pink was a natural choice when you have a 7 year old. Instead of marshmallow on my S'more muffins, I decided the sprinkles will have more appeal.
