The great thing about making buns is that you can use the same dough and fill them up with a variety of fillings and shape them to your liking. I made 3 varieties above, red bean, coconut and peanut butter. It is not hard to tell which is which.
Ingredients
500 gm - 800gm bread flour
1 tbsp custard powder
1 tbsp instant yeast
1 tsp salt
80 mg sugar
1 tsp bread improver (optional)
1 no egg
280 ml water
80 gm margarine
1 no egg yolk (for egg wash)
Method
a) Combine 500 gm flour, custard powder, bead improver, instant yeast, sugar and salt in a mixing bowl
b) Pour in egg and water
c) If using stand mixer, mix till dough is smooth then add in margerine. Continue to knead with mixer until dough does not stick to side of bowl. You may need to add in the additional 300 gm of flour if the dough is too sticky.
d) Cover with damp cloth and proof until double the size (about 30 mins to 1 hour depending on weather).
e) Punch dough slightly to let air out and divide dough into 40 gm each. Wrap with your favorite filling and leave to rise again until twice the original size.
f) Brush egg wash on top and bake for 15 mins to 20 mins at 180C.
