I baked my first apple pie end of 2005. It was just after Christmas in Simon's parents house at Watts Farm, Hertfordshire UK. It was a memorable affair for me because Simon's Nan Rosie (who passed away last year at age of 103) and Simon's mom Ginny tried to help this anxious Malaysian Chinese girl who knows next to nothing about flour put together a decent pastry. The pastry turned out beautifully. The only problem was I forgot to put sugar into the apple filling!!! Since then I subscribe that the first step to proper baking is to learn to read the recipe.
This pie is not quite the same as one I made in 2005. It is a lot lighter, less doughy and crispy on top. I learned a couple of neat tricks from watching Anna Olsen in making short crust pastry and it certainly paid off. Now where did I put that tub of vanilla ice cream.....
