Banana Cake





There is nothing more satisfying that taking the first bite of a freshly baked banana cake. A banana cake is staple food in my house. That is because I almost always have  old bananas lying in my fruit basket and this is a sure way that they get used up. The best way to keep banana cake as fresh as possible is to bake them in 'eating' portions instead of having to slice them from a big loaf. That way the cake does not loose as much moisture. Here I found the perfect size case for my golden banana cake because a muffin cup is never quite enough!  I am sure Leigh Ann will agree with me! Banana cakes taste just as good cold or warm. I like mine with warm custard or  lightly warmed with a scoop of first class vanilla ice cream.
